"Bertha"our smoker was imported from America.  She is a water bath smoker which means we have to fill the base with water so as to keep the food succulent whilst smoking.  Made by Myron Mixon, yes that is his name, she does take a battering.  Smoking for up to 18 hours at a time.

  We also have a "Baby Bertha" she goes out on hire sometimes, but we mostly use her for private parties.  This is a gravity smoker so we load the fire bucket up the one side and she smokes away to herself all day.
