Smoking our ribs

 The ribs come in fresh and we have to strip the membrane off them all 100 of them at a time
 It does make your hand hurt after a while
The we cover them in a mixture of our herbs and spices
We then load them in the smoker to smoke for up to 8 hours.  We dont slather our ribs in sauce as they are dry smoked and we like you to taste the meat not the sauce.
